A couple of weeks ago we welcomed Rosie, the owner of Ramster Hall, to come and taste some of our fine dining menu in preparation for an important birthday she’s celebrating in June. Jacaranda have been feeding patrons at Ramster for longer than perhaps any of us might like to admit, so we’re delighted to be catering for Rosie’s big birthday bash.
Some of the starters that we rustled up included:
Fillet of mackerel with smoked mackerel rillette, mackerel tartar, orange and fennel salad & beetroot foam
Potted shrimps with Selsey crab salad, chilled tomato and cucumber soup & baby watercress
Foie gras brulee with smoked duck and fine bean salad, Asian crispy duck croquette & pickled cucumber
Slow cooked pork belly with seared scallop, broad beans, carrot puree & sage and caper butter
For dishes in main course we offered a choice of:
‘Guinea Fowl nicoise’ ballotine of guinea fowl and confit leg with parmesan gnocchi, olives, fine beans, quail egg & tomato fondue
Breast of Aylesbury duck with sweet potato and shredded duck gallette, Asian greens, lime & chilli beurre blanc
Fillet of venison with roast baby onions, pancetta and beans, hand cut chips, radicchio and watercress salad & poivrade sauce
Cannon of lamb and rolled breast with white onion puree, thyme and garlic potatoes & baby summer vegetables
And to finish off the tasting, desserts included:
Brioche, frangipane and pear pudding with prune and marscapone ice cream, walnut brittle, bitter chocolate & caramel
Summer berries with brûléed lemon sabayon, blackcurrant sorbet & vanilla shortbread
Baked custard with ginger biscuit, roast greengages, sultanas, pine kernels & vanilla syrup
‘Trio of raspberry’ ~ Raspberry trifle, raspberry sorbet & raspberry brûlée
