Katie & Rob – 28th July 2018 – Marquee at home



Where did you hold your wedding and why did you choose this venue? Fallowdale, Angmering, West Sussex. It was held at my sister’s house which was lovely as it was where she held her wedding four years ago, so it holds a lot of sentimental value as well as having stunning idyllic grounds.


If you had to sum up your wedding in one sentence, what would it be? A Midsummer night’s dream.
How many guests did you have? 220



What did you choose to have on your menu?
Canapes:
Seabass ceviche on tostadas with avocado puree
Smoked salmon on buck wheat blini, with sour cream and lumpfish caviar
Vegetable tempura with cucumber and chilli dipping sauce
King prawns with chilli, garlic and ginger
Slow-cooked pork belly with apple cinnamon chutney and wonton crisp
Smokey mac’n’cheese
Coconut and coriander chicken skewers with green Thai curry
Mini Cumberland sausages with honey and sesame seeds
Asian crispy duck spring roll with a cucumber and hoi-sin sauce


Starter:
“Fish and chips” marinated cod fillet, pea and mint puree, sweet potato crisps, pickled onion and radish
Tomato tart tatin with ricotta infused with basil, wild rocket salad and rocket pesto
Main Course:
Aged fillet of West Country beef, carrot puree, seasonal vegetables, crispy potato thyme galette and beef jus
Portabello mushroom Wellington, seasonal vegetables, crispy potato and thyme galette and watercress sauce
Trio of Dessert:
Lemon cheesecake, chocolate brownie torte with a brandy snap tuille, and mango sorbet with passionfruit and mango salsa in a square shot glass



What was your favourite part of the day? Except for getting married to Rob, the food was a massive highlight for me, in fact I even mentioned it in my wedding video interview before the wedding – shows my excitement! Otherwise, the flowers and marquee decoration is something I’ll always remember, together with the dancing in the evening – surrounded by all our favourite people.


Were there any notable speeches/music/readings or particularly memorable moments? Our first dance when the confetti balloons were popped, fireworks and sparkler exit.

How did Jacaranda help make your day special? They were incredible! The whole build up was made so care free with Minty and the team, I always felt at ease every step of the way knowing Minty was always at the end of the phone to help if I needed it. Every member of the team showed such professionalism in everything that they did, from welcoming people with champagne at the reception, coming to find Rob & I to make sure we had some canapes, serving all 220 people a three course meal effortlessly. I can honestly say Jacaranda is like a well oiled machine, they just get it right! Thank you so much to everybody who helped in making our day the best day EVER.
